Coating of chocolate truffles with melted cocoa butter and cocoa or icing sugar
Truffle or "truffe" is a chocolate-based product in a round or irregular form lightly covered with cocoa powder or icing sugar. It is traditionally coated by hand.
         
 

 
 
 

  • Gives a soft and appetizing aspect

è Up Flow process :
The truffles are formed/deposited, moulded, enrobed then cooled down to 18°C in a long tunnel
è Down Flow process :
The truffles are ready for packaging after a light screening.
