Coating of shredded cheese with an anticaking additive
Many products such as cheese shreds or cubes are coated with a specific anticaking additive. It prevents agglomeration during further processing, packing, storage. It improves the free-flowing behaviour in automatic handling during application (pizza, gratinated dish).

č Up Flow process :
The cheese is formed, matured and shredded, cubed or grated
č Down Flow process :
It is ready for packing after a short cooling operation
