Coating of fresh or frozen products with batter and crumb
Vegetables can be served in small pieces (slices, dices, fries) coated with batter and crumbs. Pre-frying brings a crispy bite and enhances taste . It is usually presented as a frozen product.

è Up Flow process :
The fresh products are sliced, diced, chopped or formed, ready for coating.
è Down Flow process :
After coating, they are directly frozen or pre-fried (190°C during 40 sec.) and then frozen and packed.
