Coating of confectionnery centers with gum arabic
Confectionery centers can be pre-coated with gum arabic or another hydrocolloïd prior to the dragee panning process. A very wide range of confectionnery centers can be coated this way : nuts, liquor eggs, chewing gum, chocolate centers.
         
 
A thin layer is set between the center and the sugar or chocolate dragee coating.
